Featured on the blog today is KK’s BB Pancakes. He promises you’ll never go back to any other pancake recipe when you try this.

Now let’s get to the recipe, shall we?

INGREDIENTS

  • 2 eggs
  • ½ cup of whole milk
  • 1 teaspoon of vanilla essence
  • 2 cups of cake flour
  • 1½ teaspoon baking powder
  • 1 cup of fine granulated sugar
  • 2-3 tablespoons of melted butter
  • 1 cup of blueberries
  • 1 tablespoon of icing sugar
  • 1 tablespoon of room temperature water(distilled preferred)
  • A pinch of salt

DIRECTIONS

STEP 1: In a sizable bowl, whisk together flour, sugar, baking powder, and salt; set aside.

STEP 2: In large bowl, whisk together milk, melted butter, egg yolks and vanilla essence. Add dry ingredients to milk mixture; whisk until just smooth.

STEP 3 (EL MERINGUE):

In a separate bowl using an electric mixer or the combined might of your ulna and radius whisk the egg albumen till it’s white and stiff (meringue).Add a tablespoon of sugar to the egg albumen and whisk till foamy. Continue to incorporate the sugar gradually till you get a white and stiff meringue.

STEP 4:

With a spatula gently and calmly fold the meringue into the slurry. Making sure the two components are mixed evenly and well.

STEP 5

Heat a large skillet (nonstick or cast-iron) or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil/butter; carefully rub skillet with oiled paper towel.

STEP 6:

Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in oven. Continue with more oil and remaining batter. (You’ll have 12 to 15 pancakes.) Serve warm, with desired topping.

STEP 7 (TOPPING):

Into a pan goes a cup of blueberries, add butter and mash lightly. Add a tablespoon of water and half of sugar. Cook till the sugar is melted and the blueberries are bubbling.

STEP 8 (SERVING):

Stack the pancakes maximum 6 pancakes and scoop some of the blueberry jam on top of pancakes. Drizzle or sprinkle with some icing sugar.
